"Martin Testa Catering has been catering our annual trail ride for the last 3 years. There isn’t enough praise I can give to Martin, Debi and his crew. As President of Vaqueras del Camino I was insistent that Martin cater our ride again. His crew never disappoints. Martin meets us at any location and this can sometimes be difficult due to the ranches we ride on. His portable kitchen is amazing and full service . The food is outstanding!! When you have 100 ladies camping for 5 days and no one complains about the food well that says it all. Martin remembers every year that we have a few vegetarians in the group and without asking him to do so he provides for them. Our breakfast menu is as follows: Omelet station and eggs cooked to order, Chorizo and eggs, breakfast potatoes, fresh fruit tray, sausage and bacon, pancakes, oatmeal, biscuits and gravy, french toast, flour tortillas, juice, milk, and coffee. Dinner: Pork Loin caramelized and slow cooked on BBQ, green salad (not just any green salad) baked potatoes, chives, butter, sour cream, sugar peas and baby carrots, french baguette with honey butter. Believe me when I say this “ When you can eat like this camping life is good”. I would highly recommend Testa Catering for any event if he can provide food for 100 ladies in a camping situation imagine what he can do for you."

"I have been in charge of producing dinner events here on the Central Coast for over 20 years. During that time I have relied upon volunteers, hotel banquet staff and various caterers to perform all the tasks necessary to have a successful event. Based upon my experience over the years, I can not say enough about Testa Catering. In a nutshell, Testa Catering stands out in every category necessary for success. "Testa's has been catering the Santa Maria Valley YMCA's events for over 20 years! We have an annual dinner that serves 200 people and we wouldn't dream of ever using another caterer. Testa's is consistent in fine quality food and good pricing, but that's not what sets them apart. The intangible benefit of Testa Catering is the fact that Martin and Debi give back to this community 100 fold. In addition to their amazing staff and quality service, they are highly involved in a plethora of community functions, whether or not they are catering them. This unacknowledged generosity of time and energy is simply who they are and what they do. I find this type of altruism to be a rare and treasured gift in the business world. Part of what I look for when hiring, besides great food and even better wine!, is this quality of community involvement and caring. "Our guests said Testa Catering provided the best food at any wedding they ever attended! Executive Chef/General Manager Tracy Labastida just seemed to intuitively understand what we had in mind and delivered exactly what we wanted. The Testa team provided wonderful food and excellent, friendly, efficient service! Here is a menu of what we enjoyed: Passed hors d\'oeuvres - Seared ahi on cucumber with honey mustard cabbage slaw, chipotle and topped with fresh avocado. - Bacon-wrapped scallops: thin sliced bacon wrapped around scallops and baked - Prosciutto-wrapped fruit: prosciutto wrapped melons, peach, nectarine, figs. Hors d\'oeuvres table - Bruschetta: fresh roma tomato, fresh basil, buffalo mozzarella, garlic, on herbed baguette chips. - Ceviche white fish, shrimp, jalapeno, fresh squeezed lime juice, cilantro, red onion. - Baked brie, one with blackberry and one with apricot. Served with assorted cracker tray. - Olive tapenade. Entrée - Pork baby back ribs with Santa Maria-style dry rub cooked over red oak on site. - Boneless breast of chicken breast cooked over red oak while being misted with red wine spray then steamed in cilantro soy sauce. - Local baby green salad bar affaire with sides of raspberry and citrus vinaigrettes, mandarin oranges, candied walnuts, blue cheese, feta, strawberries, dried cranberries. - Rosemary roasted red potatoes. - Assortment of dinner rolls with whipped honey cilantro butter. - Grilled in season vegetables. - Sautéed green beans with shallots, olive oil and bacon. - Homemade salsa. - Vegetarian option: grilled portobello mushrooms and grilled marinated tofu. It was all wonderful!"
